Chunky Potato Soup

This was just . . . not good.  I’m not saying I made it right, but I have no interest in finding out how I made it wrong.  Potatoes boiled with onion, then add a bit of flour and red pepper flakes and ham and cheddar cheese and a mess of milk.  This should have been comfort food but the texture was a mess.

A better use of the potatoes and cheese and onion (and maybe even the red pepper flakes, I suppose) would have been to saute the onions, boil up then simmer the diced potatoes with some split peas and just enough chicken broth to leave you with next to no liquid when you uncover it later.  Grate the cheese over it and it’s heaven on a rainy day.
